The Roll Fermentor® is intended above all for winemakers who work on high - quality wines and are looking for aromatic complexity. Due to its thermic inertia, and compared to steel which is regarded as "neutral", wood provides much more integrated tannins and flavours as soon as fermentation starts. |

The Roll Fermentor® is a perfectly adapted unit for the making of red wines.
A single cask allows the winemaker to complete the entire vinification process as well as the maturing of the wine in one vessel.
With the Roll Fermentor®, the winemaker puts the grapes directly in the cask through a wide stainless steel hatch. Alcoholic fermentation takes place then in a small volume more favorable to good extraction. During this stage, the well-balanced oxygenation due to the wood allows an excellent evolution of phenolic components which improves:
- The combination of anthocyanins and tannins (color stabilization).
- The polymerization of tannins (decreasing astringency).
- A good aromatic display of the compounds of the wine and the wood.
During this fermentation as well as during the stage of maceration, the 360° rotating system allows to break the cap very easily. This gives a better homogenization of the liquid and solid stages and, thus, a better extraction of compounds contained in the skin of the grapes.

With its steel rack, the Roll Fermentor® is easily moved with a forklift. Vertical and horizontal stability is perfectly assured due to its fork guides.
In conclusion, the Roll Fermentor® is an easy-to-operate tool that combines vinification and ageing in one place. Specially dedicated to “micro-cuvées” , it offers an excellent alchemy between the grape and the oak for the creation of very great wines..

| The comparison was made with Merlot grapes vinified in a Roll Fementor and in a stainlees steel tank, also Carignan grapes vinified in a Roll Fermentor and in an oak upright tank. |

CONCLUSION |
The sample from the Roll Fermentor was easily recognized and preferred as against the stainless steel tank and the oak upright tank samples. This is due to its aromatic complexity, balanced structure and distinctive fruit flavours. In both cases the Roll Fermentor generated a total phenolics index ( TPI ) of 15 to 18% more. |
